I keep our family’s mayo in the fridge. This was apparently the norm, but some sources have updated that store bought opened mayo can be left out, alongside ketchup and mustard.

No thanks.

Every since watching the early 1990s, I adopted the regime that anything containing mayonnaise that has been at room temperature for more than two hours is toxic. Even for non-mayo condiments, giving the chance for mould or other bacteria to grow just doesn’t seem prudent.

Ultimately, there is a preponderance of evidence to show that ketchup and mustard are safe, but I still am not getting to the tipping point of changing behavior. What would it take to make that happen?

More studies? Possibly. Chefs endorsing how it makes ketchup a much better experience? OK, that’s interesting. Evidence about how it saves the earth? Good. Evidence that storing in the fridge is actually causing more harm? OK.

Whatever our deeply held beliefs are, it’s importance for us to know what are the points at which we’d update our beliefs.
