One thing that I’ve found ChatGPT to be very good at is filling in items that overlap. I asked it to prepare meal ideas for the following criteria:

  • Keto-friendly
  • Vegan
  • Kosher for Passover
  • Does not contain Kitniyot (legumes)

ChatGPT complied. However, it wasn’t perfect. It came up with 10 ideas. However, three of them fell outside of the criteria. The real power is that the system was responsive to corrections. I informed it of its mistakes and it came up with more examples that did match the criteria.

I then asked for a fifth criteria — using vegetables that weren’t that common. Sure enough, ChatGPT complied and I had the following list.

1. Kohlrabi Noodle Salad:
Spiralize kohlrabi into noodles, and toss with thinly sliced radishes, chopped scallions, and chopped fresh dill. Dress with a mixture of olive oil, lemon juice, salt, and pepper.

2. Jicama and Avocado Salad:
Peel and julienne jicama, and combine with diced avocado, chopped cucumber, and thinly sliced red onion. Dress with a cilantro-lime vinaigrette made from olive oil, lime juice, minced garlic, chopped cilantro, salt, and pepper.

3. Watercress and Fennel Soup:
Sauté sliced fennel bulbs and minced garlic in olive oil until softened. Add vegetable broth, bring to a boil, and then simmer for 15-20 minutes. Add chopped watercress and cook for an additional 5 minutes. Blend until smooth, and season with salt and pepper.

4. Roasted Rutabaga Fries:
Peel and cut rutabaga into fries, toss with olive oil, salt, and pepper, and roast in the oven until golden and crispy. Serve with a vegan garlic aioli made from blended cashews, lemon juice, garlic, and kosher-for-Passover horseradish.

5. Baked Romanesco with Olive Tapenade:
Cut Romanesco cauliflower into florets, toss with olive oil, salt, and pepper, and roast in the oven until tender. Serve with an olive tapenade made from finely chopped Kalamata olives, capers, garlic, parsley, and olive oil.

6. Sunchoke and Asparagus Stir-Fry:
Sauté thinly sliced sunchokes, asparagus, and shiitake mushrooms in olive oil until tender. Season with salt, pepper, and a splash of lemon juice. Serve over a bed of sautéed kale or spinach.

7. Stuffed Poblano Peppers:
Roast whole poblano peppers in the oven until soft. Fill each pepper with a mixture of cauliflower rice, sautéed onions, garlic, diced zucchini, and chopped fresh cilantro. Bake until heated through and serve with a drizzle of cashew cream.

8. Celeriac and Parsnip Mash:
Boil peeled and cubed celeriac and parsnips until tender. Drain and mash with a splash of almond milk, olive oil, salt, and pepper. Top with fresh chives.

9. Swiss Chard Rolls:
Blanch Swiss chard leaves and pat dry. Fill each leaf with a mixture of diced sautéed mushrooms, onions, and garlic, and fold into rolls. Bake in the oven with a splash of vegetable broth and serve with a lemon-tahini sauce.

10. Braised Leeks and Artichokes:
Sauté sliced leeks and halved artichoke hearts in olive oil until tender. Add vegetable broth, white wine vinegar, and a bay leaf, and braise until the liquid is reduced and the vegetables are cooked through. Season with salt and pepper.

I continued the chat asking if suchokes, rutabagas, and jicamas were indeed keto friendly and while sunchokes were higher, if I used moderation, I could still incorporate them.

Sure, I could have thought about a list and come up with something on my own but this took 90 seconds of chatting versus 15–20 minutes. What I also appreciated was that when the system was prompted with a possibility of an error, it went and caught ones that I hadn’t pointed out.

The benefit and potential use of these generative tools is as a brainstorming aid and to help inspire new thoughts and ideas.
